My son LOVES pears so I look for FREE sources of pears in the fall and can them for him to eat all year long. I personally don't enjoy canned fruit but he does, and it makes it much cheaper than buying it all year.
Pears (about 18 pounds of peeled, cored, and sliced pears for 7 Quarts)
10 cups of water
1 1/2 cups honey
1/2 cup lemon juice
Bring water, honey, and lemon juice to a light boil. Then pack your sterilized jars with the peeled, cored, sliced pears, then ladle in the the hot water mixture to cover the pears, leaving 1/2 inch of head space.
Place the lids on the jar and process in a water bath for 30 minutes for quarts and 20 minutes for pints.
